This Scottish Salmon has been cold smoked in the traditional Scottish manner creating a heavy, yet sweet, smoke flavor. The fat line, which lies between the skin and flesh, has been removed which eliminates the bitterness typical in most smoked salmon. We serve this with cream cheese, red onion and capers.
